Cured Cod, with classic new years danish condiment vinaigrette (capers, eggs, wholegrain mustard)

600 g fresh cod loin, skin and pin bones removed
60 g fine sea salt
40 g caster sugar
1 tsp freshly ground white pepper
1 organic lemon, zest only
300 g Brussels sprouts
10 g fine sea salt (for blanching water)
2 large eggs
30 g shallot, very finely chopped
40 g capers, drained and roughly chopped
10 g Dijon mustard
5 g wholegrain mustard
40 ml white wine vinegar
70 ml cold-pressed rapeseed oil (or mild olive oil)
5 g caster sugar
2 g fine sea salt, plus more to taste
Freshly ground black pepper, to taste
10 g fresh chervil leaves, picked
